Our most precious ingredient is time. We allow all carefully selected products to reach their full potential in all their purity, through the use of fermentation techniques, wild picking, slow ageing,… Everything on the table is homemade: from the sourdough bread to the kombucha drink and soy sauce. Behind the scenes, we developed a taste library that still evolves every day, through research into both ancient crafts and innovative methods.
We serve one menu, with meat, fish and shellfish. Our greatest wish is that you allow yourself to be carried away on our wave of passion and curiosity. Due to our unique approach, we can only make very limited adjustments for food allergies and intolerances.
